Apple Puff Pancake
This was a delicious way to start the day with my hubby, though I really ate most of it. I was never a big fan of puffed pancakes until now. One time I made a large dutch baby for my sister and hubby. Lets just say it put a damper on our weekend home cookin :( The sliced apples added nice texture to balance out this very soft pancake, and perhaps it was more successful simply because of the size. Great use for the apple.
3 eggs
3/4 c heavy cream
1 vanilla bean
1/2 c white flour
1 tsp cinnamon
1/4 c butter
2 tbs light brown sugar
2 Gala apples
confectioner's sugar (for garnish)

1. Turn oven to 425 degrees. Mix eggs, milk, and scrapings from vanilla bean in a small bowl. Blend well will hand mixer. Add flour, sugar, salt, and cinnamon and blend well.
2. Melt butter in small baking dish (like one shown above) in the oven. Carefully layer the apples and pour mix on top. Bake around 18 minutes or until light brown and puffy. Shower with confectioner's sugar. Enjoy :)
